Snow Skin Durian Mooncake

Manage to make my family's favorite snow skin durian moon cake yesterday! Not too difficult but need a little skill when moulding them! :)

Snow Skin Pastry Skin
210g cooked glutinous rice flour
300cc water
400g icing sugar (sieved)
120g shortening
half tsp durian essence

Mix all ingredients into mixer & blend well.

The filling:
Fresh durian
For fresh durian, simply scoop it up with a spoon and try to keep in onto a round shape and then refrigerate it. Use fresh durian flesh and put it onto little mould onto the fridge.Each durian ball is around 10g. This would make it easier to shape later.

Lotus paste
( I bought ready made lotus paste from广祥泰 Kwong Cheong Thye Pte Ltd 61 Lorong 27 Geylang Tel: 6748 0128 )

Method of moulding:
I used the smaller type of moon cake mould.
First I measure the whole moon cake by using only the lotus paste (Is around 50g), from here I divided the lotus paste to 20g,the snow skin pastry 20g.
Wrap the lotus paste(20g) with the ball of fresh durian (10g), total weight is around 30g.
Carefully wrap the filling with the snow skin paste than press into the moon cake mould. Gently knock the side of the mould, turn out the moon cake & is done!
